Pizza Casserole

A friend gave me this recipe some time ago. I made it the
first time and was pleasantly surprised to find that adults
liked it as well as the children. Because it is easy to prepare
and freezes well, I have often made it and popped it in the
freezer for later use.
1 pound ground beef or Italian sausage (I use hot Italian Sausage)
1 medium onion, chopped
1 medium green pepper, chopped
1 tsp. garlic, chopped (I use a little more)
1/2 pound sliced pepperoni
1 can (4 oz) or more sliced mushrooms, drained
1 jar (32 oz) spaghetti sauce (28 oz works)
3 cups rigatoni or other small pasta, cooked and drained
2 cups (8oz) shredded mozzarella cheese
crushed red pepper flakes (optional & to taste)
In a large skillet, cook beef, onion, green pepper and garlic
powder until meat is browned and vegetables are tender; drain.
Stir in pepperoni, pepper flakes, mushrooms and spaghetti sauce.
Place noodles in a greased 13x9x2" baking dish. Top with
the beef mixture; sprinkle with cheese. I like to add thin strips
of pepperoni on top of the cheese. These get nice and crunchy
when baked. Bake uncovered, at 375 degrees for 35-40 minutes
or until bubbly. Let stand for 10 minutes before serving. Yield:
8-10 servings
