Pasta, Tomato and Spinach Soup from JJ, jmjod@prodigy.net

Hi Chef, Nell and all Recitopians, JJ from Arkansas with my first
submission and I believe you'll love it. It's hearty and much thicker
and richer than it first sounds. Another bonus is that my two boxers
aren't crazy about it and I don't have to share unless, of course, I
serve it with bread.
1 Bunch Green Onions, chopped
1 tsp olive oil
6 cups water
28-oz can crushed tomatoes
4 T chicken soup base
1 cup garden rotini
10-oz frozen creamed spinach
15-oz can drained great northern beans
salt and pepper to taste
Sauté green onions in oil. Add water, tomatoes and soup base and
bring to a boil. Add rotini and cook 5 minutes. Add spinach and cook
until thawed. Stir in beans and heat to serving temperature. Serves 4.
