Devil's Food Cake with Sour Cream Filling author unknown
2 cups cake flour
1 1/2 cups white sugar
3 Tbs. cocoa
1 tsp. soda
Pinch of salt
2 eggs
1 cup thick sour cream
1 cup sour milk
2 tsp. vanilla
Sift cake flour, sugar, cocoa, soda, and salt together SEVERAL times. Beat eggs
and add sour cream and sour milk. Fold in dry ingredients. Add vanilla. Pour
into cake pan and bake at 350 degrees until toothpick inserted in center comes
out clean. Top with Sour Cream Filling, Fluffy White Frosting, and chopped
walnuts.
SOUR CREAM FILLING
4 egg yolks
1 cup brown sugar
1 cup sour cream
2 Tbs. flour
Mix together and put in double boiler. Cook until the thickness of pudding. Add
nuts if you like. Spread over top of Devil's Food Cake.
FLUFFY WHITE FROSTING 3/4 cup sugar
1/4 cup light corn syrup
2 egg whites
2 Tbs. water
1/4 tsp. cream of tartar
1 tsp. vanilla
Combine ingredients in top of double boiler. Beat over rapidly boiling water
with electric mixer until peaks form when beaters are raised. Remove from heat
and beat in vanilla. For larger cakes, use 3 egg whites, 1 cup sugar, 3 Tbs.
water, and 1/4 tsp. flavoring. Frost the cake and then sprinkle with chopped
walnuts.
