Low Fat Chicken Fajitas

First time recipe contributor. Live in Denver with my dear husband
and our adorable 21 month old daughter. I was a gold medal winner in
a weight watcher's recipe contest with this great burger recipe. I'm
a former leader and a lifetime member who enjoys the challenge of
making up recipes for substantial and healthy foods.

1 lb. boneless, skinless chicken breasts, cut into
thin strips
16 oz. bottle fat free Italian dressing
1 medium onion, sliced and then cut into strips
1 green pepper, cut into strips
4-6 Roma tomatoes, quartered (or smaller)
8 wheat tortillas
low fat sour cream
fat free cheddar cheese, grated

Place chicken in a bowl and cover with Italian dressing. Refrigerate overnight, stirring occasionally. Drain chicken, reserving marinade. Pour about half of the marinade into a skillet (cast iron works best), and add chicken strips. Cook chicken thoroughly. When it is cooked, remove the chicken to a dish. Add more dressing if skillet is dry. Sauté onion and pepper strips until just done. Add Roma tomatoes and chicken, until the chicken is hot.

Serve with tortillas, cheese and sour cream. Sometimes I also coarsely chop a couple of additional Roma tomatoes as a topping. Serves 4
