Low Fat Chicken Fajitas
First time recipe contributor. Live in Denver with my dear husband Place chicken in a bowl and cover with Italian dressing. Refrigerate overnight, stirring occasionally. Drain chicken, reserving marinade. Pour about half of the marinade into a skillet (cast iron works best), and add chicken strips. Cook chicken thoroughly. When it is cooked, remove the chicken to a dish. Add more dressing if skillet is dry. Sauté onion and pepper strips until just done. Add Roma tomatoes and chicken, until the chicken is hot. Serve with tortillas, cheese and sour cream. Sometimes I also coarsely chop a couple of additional Roma tomatoes as a topping. Serves 4 This
