Ready to Bake Breadsticks

I sometimes like to have fresh rolls or soft bread sticks for breakfast, but I don't like getting up in the wee hours in order to get them prepared in time for breakfast. Also, it is nice to serve fresh bread sticks at dinner parties. But that is difficult with all the other preparation that is required. So I was thrilled when I was given the instructions for making ready-to-bake bread sticks. Now I have fresh bread sticks for breakfast often.

Use your favorite bread recipe - I usually use one that has half whole wheat flour and half unbleached flour. Will send it if anyone wants it.

After first rise, shape dough into bread sticks. (I found that I usually get 4 bread sticks about 8" long from each cup of flour in the recipe.) Place on baking sheet and cover. Let rise until doubled in size. Bake at 250 degrees F. for 15 to 20 minutes until "set" but not brown. Let bread sticks cool on a rack. If using in the next day or two, place in plastic bag when cool. If you have more than you plan to bake soon, seal the extras in a plastic bag and freeze. Bake the room temperature bread sticks at 400 degrees F. for 8 to 10 minutes. Bake the frozen bread sticks at 350 degrees for 10 to 15 minutes until browned. Brush bread sticks with melted butter when you take them out of the oven. To make them taste like the Olive Garden bread sticks, brush with garlic butter.
