Santa Fe Black Bean Soup From World Wide Recipes.com and Jill This soup is so flavorful that you won't miss it not having any meat either! (No I am not a vegetarian but enjoy lots of vegetarian dishes!) I have tried this with sliced sausage, but prefer without any meat. Great with French Bread and butter or good old cornbread! I live here with my husband of 20 years, our two teenage sons, our two dogs, two birds, one guinea pig, and an aquarium with a half dozen fish. Following is one of the families favorite dishes, I like things simple. Chicken Enchiladas "Simplified"1lb to 1 1/2lb diced and lightly browned chicken salt and pepper to taste 1/2 tsp onion powder 1/4 tsp garlic powder 1/2 tsp chili powder dash cayenne pepper 8 oz can tomato sauce 10 oz can enchilada sauce, your favorite 16 oz can refried beans, or make your own 8 oz grated cheddar cheese, more if you like lots 6 "Gordita" style tortillas In a non-stick skillet sprayed lightly with "no stick" spray lightly brown chicken. Drain chicken and add seasonings, tomato sauce, and 1/4 can of enchilada sauce. Stir well. Fill each tortilla with 1/3 cup refried beans, cheese to your taste (I like lots), and some of the seasoned chicken. You can add olives, onions, etc. Place the filled and rolled tortillas into a 13"x9" baking dish that has been sprayed lightly with "no stick." Cover the enchiladas with the remaining 3/4 can of enchilada sauce and sprinkle with cheese. Bake in a 350 degree oven for 30 minutes. Serve with sour cream, guacamole, and a fresh green salad...Yum... Serves 4-6 people. You can also make this dish with ground beef and corn tortillas.
